I didn't want this year to go out without a link to a favorite recipe we've been using for some time. It's a vegan cheese sauce/soft cheese type recipe that we've enjoyed a few ways. You can make a thinner version for pour over type sauce or cook it thicker to set up a bit more. Credit goes to Megan at Carrots and Flowers blog.
It's a recipe for quesadillas. When you check the link out, it is in the top portion of the recipe. We have used it in tortillas, but you can use it for many things. There is another smaller recipe there too, which I've made maybe once. We enjoy the cashew cheese portion at the top. Check it out.
